Apparently I am not being invited out anywhere this year. I was considering going to one of those public dinners (my mom and I used to do that after dad passed), but they may not have what I like as side dishes and you get ONE serving. If I cook at home, I will likely have leftovers to enjoy for a few days. This is what I bought yesterday:
turkey breast cutlets (put in freezer for now), I plan on braising them
can of sweet potatoes and pumpkin (I combine them for a side dish)
garlic instant potatoes (I add my own seasonings, too)
jar of turkey gravy (to splash here and there)
box of cornbread stuffing mix (my mom made the best cornbread stuffing that I will never get to have again)
Brussels sprouts (I hope they keep in the crisper for a week)
For dessert I plan on apple cranberry ambrosia which I already have the ingredients.
I guess that's enough for an old lady. A lot can be prepared the day ahead than just warmed up when needed.
